Ice Cream Nachos !!

Once you have some, your life might be changed forever. I've been thinking of making ice cream nachos since last October when a speaker at MOPS mentioned having them as a special treat. They have grain, dairy, fruit, umm.. ok so it's not a completely balanced meal but I finally surprised the boys with them last night for dinner. Shane was out of town so we didn't have to worry about ruining his diet (although I think going to the Seahawks game didn't do his diet any favors) and it was a special day, but we didn't have a main ingredient: ice cream. Since he had the van we decided to walk to Johnny's, a little store in our town, to get ice cream. Unfortunately the quick walk took an hour and 15 minutes because I couldn't push the stroller through the field so Lincoln walked there and back in flip flops. The ice cream was half way melted by the time we got home but we got some exercise, saw a snake and some other cool things along the way, and we were together.

Slice the tortillas.

Put cinnamon and sugar on them (at this point they look like baby elephant ears from the fair)

Layer up. It was a make your own kind of night including berries, cherry syrup, maraschino cherries, hot fudge and carmel, sprinkles, frosted animal crackers, vanilla ice cream and hand made cinnamon sugar chips.

So both boys didn't finish their ice cream nachos but they still thought it was the coolest thing ever, the best dinner ever, I was the best mom ever, etc. You have to bend the rules a little every now and then!

  3. Wow, you are the best mom ever! I want ice cream nachos for dinner! :) I finally just got updated on your blog and I LOVE reading all of your posts. You are such a loving, fun, hands-on mom. You are such a good example to me and come up with the best ideas for your kids and family. Seriously!

Lincoln favorite new past time, listen closely for "Dada"  Dylan had cowboy day at school and could dress up and meet "real cowboys". We live in a hick town and his school was having an assembly about the cowboy way , or having character. Yes, Lincoln's bib is purplish, but it says I Love my Sister so it's ok :)  Cute big boy outfit Auntie Jackie got Lincoln, while sticking out his tongue. I think it looks like a little pickle. Weird, another tongue shot, he does it a lot. While playing with a plush orange (like the fruit) it sort of landed like this and I thought it looked a little like a bikini top and snapped a pic. Hey you have to have fun with life right?

Because I have a bad habit of zoning out when the tv is on, I've turned it off and told myself it can't come on until a rerun of a show I wanted to see comes on at 11. I can't stay up late so I'm trying to watch shows that will rerun, which is most of them outside of the basic cable channels. So obviously instead of working on my homework about Intercultural Crossings in Indian Music while Lincoln is taking a nap, I'm on here updating you on the trivial matters of my day. A friend told me an interesting revelation the other day. "When you have a child that is an infant you are the most physically exhausted. When you have a child that is just entering school aged you are the most mentally exhausted. When you have a teenager you are the most emotionally exhausted." So the way I see it, since I have one in each category I'm basically the most exhausted I'm going to get and since I'm seeming to do ok, it's only going to get easier from here. Y...

New Moves

So I officially started feeling the baby moving around this week, Tuesday to be exact, and now I feel dancing all the time. It's pretty weird because it has been so long since I've housed a fetus and I know no one else can feel it from the outside, but it's really real. The picture I took on the left shows me holding a photo of a 17week baby to scale. It's hard to imagine something that big is fitting inside of me already :) We had the "Mom" talk today inside the Dollar Store. Danielle asked me if it was ok if she could call me Mom. She says I treat her the way a mom should treat her daughter and that made me so proud. I am so glad that even though we have our daily and weekly ups and downs that our family unit is really coming together.
